Being gluten intolerant is frustrating at times, especially when those random cookie cravings come along! So what do you do with those cravings when you can't easily run up and get a fresh baked cookie? Bake them yourself!
I have adapted a few of my favorite biscotti recipes and this is the final product. I use Cup4Cup Gluten-Free All-Purpose Flour and Enjoy Life's Mini Chocolate Chips (gluten-free, dairy-free, soy-free, & nut-free). If you haven't tried these chocolate chips, you MUST! I like them better than regular chocolate chips even though they taste incredibly similar.
These crunchy biscotti are great for homemade Christmas gifts! Wrap them in festive cellophane or put them in a cute tin. I promise you they will be a hit! This recipe can be made with regular all-purpose flour for those gluten lovers in your life (even though they won't be able to tell a difference with Cup4Cup) :)
