I am ADDICTED to this bread. But seriously. When I was home for the Holidays, W's mom and I made her Aunt's Apricot Nut Bread (with a Gluten Free twist). I loved this bread so much that I had to make it when I got back to Dallas! Top it with butter, apple butter, or an apricot jam -- even your glutenous friends will eat this up!
Instead of using Gluten Free Bisquick, we decided to create our own Gluten Free Biscuit mix (which was surprisingly easy). This quick bread is also super versatile. Switch out the apricots with another dried fruit or take out the nuts completely -- that is the true beauty of quick bread.
