Last week W and I decided to break our crock pot virginity with shredded beef tacos! I've been dying to use my crock pot but to be honest, I simply forget about it when meal planning for the week! I found this recipe via Pinterest (of course!) To be honest, I'm a terrible chef and really do not enjoy cooking! So if I can do it, so can you ;) It was SO easy and SO yummy! What's even better about it is that we can get an extra two meals out of it which made for some delicious leftovers :)
My tips and suggestions when cooking this meal:
- The recipe suggest buying boneless chuck roast. I found this piece of meat to be very fatty! We ended up cutting off a decent amount of fat, so I would recommend buying a leaner piece of meat.
- About 30 minutes before the meat is done, we cut it up into smaller chunks so it would really absorb all the yummy juices it was cooking in! We think it really amped up the flavor
- Be sure to drain the meat really well before serving. Our tacos got soggy quickly because the meat was so wet with the juice it was cooking in. We weren't patient enough when serving ourselves ;) #hangry
- Overall, this meal was great for busy work days! Because you prep in the morning then simply forget about it! Then voilá dinner is served!
